Grandpa's Famous Enchiladas
Ingredients
- 1 pkg flour tortillas
- 1 pkg dry enchilada mix
- 1 lb ground beef
- onion, chopped
- 1 can olives, chopped
- 1 can mushrooms, sliced
- 1 can green chiles, chopped
- 1 can green enchilada sauce
- cheese, grated
Steps
- Brown the hamburger with the onion and let cool
- Add olives, mushrooms, chilies and cheese to beef mixture
- For the dry sauce, follow instructions on packet (I use tomato sauce instead of paste) and add can of green enchilada sauce
- Cover bottom of pan with sauce.
- Dip both sides of tortilla in sauce and fill tortilla with mixture, roll, and then place on sauce-covered pan.
- Once pan is full, put more sauce on rolled tortillas adn cover lightly with cheese
- Pre heat oven to 350° and cook until cheese is melted and enchiladas are warmed through.
- Serve on bed of lettuce with salsa and/or guacamole, refried beans and Spanish rice.
